Among the most difficult achievements in the production of Gentili flavored products is definitely the lemon EVO oil. After years of trying, made with different products (different types of lemon) Romolo seems to have found a match with a local greengrocer who proposed a product more than suitable for marriage with his oil. Acidic and assertive the taste of lemon does not go so easily with oil, so Gentili began a long process of experimentation among his cultivars that led him to obtain a fresh and balanced product suitable for many kinds of seasonings. The lemons are sourced from a trusted citrus grove, the zest of which enters the olive process right from maceration to obtain a superior quality EVO oil that retains just the right hints of lemon to be appreciated on fresh dishes, raw fish, carpaccio and beaten meat, and salads.
