After Verdone, made from Caninese olives, always the first to arrive at the mill, they continue with Organic Olive Oil, another top-quality product from the Gentili line. This oil meets high quality standards, greatly influenced by the authenticity of the processed product, given that to qualify for organic certification, this oil follows a precise and meticulous cultivation method inspired by ethical and sustainable practices. Natural fertility and absence of GMOs
Indeed, rather than using the various synthetic products currently available on the market, such as GMOs, Gentili seeks to exploit the soil’s natural fertility in its field production, thus obtaining a 100% natural product. Some characteristics of Gentili’s Organic olive oil are shared with Verdone, even though the two products are actually very different. For example, both come from family-owned olive groves, so they are exclusively the fruit of the Gentili land. Another common feature is the early or medium-early harvest of the fruit, making them the first products to be processed at the Gentili mill. Both products feature the “Caninese” olive variety, a typical local cultivar, present 100% in Verdone and 90% in the Organic olive oil, which also includes 10% Frantoiana olives to soften the flavor.
Seasonal challenges and biological philosophy
Since the organic production process has been underway for a few days now, Romolo Gentili gives us a preview of what to expect from this product, which strives for excellence every season while facing ever-changing challenges. It’s important to remember that the philosophy behind organic production doesn’t involve any type of treatment, not even the most natural. Therefore, if the season is adverse and the plants are attacked by flies, both flavor and yield will inevitably suffer.
Thermoregulated processing and final quality
Finally, we remind you that the entire olive processing process at the Gentili mill is temperature-controlled, with luminous displays that constantly inform you of the cold pressing temperature, i.e., below 28°, to guarantee the highest quality of Gentili organic oil.
